Vegetable caviar from sweet peppers is a wonderful, delicious dish. If you have a desire, the caviar can be canned. The flavor of the vegetable dish from this does not change.
Ingredients:
Sweet peppers – 1 kg
Garlic – 3 cloves
Salt – 1 teaspoon
Sugar – ½ teaspoon
Coriander – 1 teaspoon
Cumin – 1 teaspoon
Ground paprika – 1 teaspoon
Pepper mixture – to taste
Vegetable oil – 2 tablespoons
Vinegar 9% – 1 teaspoon
Instructions:
- Wash the peppers, remove the stalk, seeds, septa, cut lengthwise into 4 parts, bake in the oven at 190 degrees for 25-30 minutes. Cool slightly, remove the skin. Chop with a blender.
- Heat a dry deep skillet. Roast cumin, coriander, paprika for 1 minute.
- Add vegetable oil, chopped garlic, pepper, salt and sugar to the roasted spices. Bring to a boil, simmer over low heat for 5-7 minutes.
- Add vinegar, stir.
- Spread the hot mass into sterilized jars, screw on sterilized lids or roll up.
- After cooling, store the jars in a dark, cool place.
