Baked fish with vegetables

Baked fish with vegetables is a successful, tasty combination. Haddock turns out tender and juicy, and baked vegetables complement its taste well.

Ingredients:

Haddock fillet – 500 g

Cherry tomatoes (any kind) – 6 pcs.

Garlic – 5-6 cloves

Lemon – ½ pc.

Thyme – 1 teaspoon

Olive oil – 2 tablespoons

Balsamic vinegar – 1 teaspoon

Ground red pepper

Salt

Preparation:

  1. Finely chop the garlic.
  2. Cut the haddock fillet into portions, sprinkle with lemon juice (use 1 part), rub with chopped garlic (use 1 part), pepper and salt.
  3. Grease the baking dish with olive oil and place the fish in it.
  4. Cut the tomatoes in half, mix with the remaining chopped garlic, thyme, balsamic vinegar, the remaining lemon juice, pepper and salt.
  5. Place the tomatoes on top of the fish.
  6. Bake for 25 minutes at 190 degrees.
  7. When serving, garnish with herbs.
