Zucchini appetizer – this is an elementary recipe! Note to those who are in a hurry and cannot spend much time on cooking.
Ingredients:
Milky ripeness zucchini (or squash) – 1-2 pcs.
Eggs – 2-3 pcs.
Garlic (optional) – 1-2 cloves
Vegetable oil – 1 tablespoon
Fresh greens (dill, parsley, cilantro, celery, spinach, etc.) – to taste
Salt, pepper – to taste
Preparation:
- Wash the zucchini, cut into small cubes and fry in vegetable oil until half-cooked.
- Beat the eggs, add salt, pepper, pour into the pan with the zucchini.
- Mix everything, add garlic (optional). Cook over medium heat until done (the zucchini should become soft).
- Sprinkle with fresh herbs before serving.
