Dogwood jam

Today I want to tell you about an amazingly useful, but not so popular lately berry, dogwood. This plant has been known to man for more than five thousand years! Not only the berries are useful, but even the leaves and bark of the plant. Dogwood has a low glycemic index and is suitable for lovers of healthy eating, even people suffering from diabetes. Dogwood berries have the property of strengthening the immune system, increasing appetite.

These amazing berries can be eaten fresh. They have a pleasant sour-sweet, astringent, tart taste. Dogwood can be used to make tinctures, cook jam, compotes, fruit drinks, jams, jellies and even salted like olives. Fresh and dried berries are an excellent seasoning for meat and fish dishes. And from roasted dogwood seeds you can get a drink that tastes like coffee.

I really love dogwood jam. You can cook it with or without the pits. The recipe is very simple.

Dogwood berries – 1 unit (500 g, 1 kg, 2 kg, as many as you have)

Sugar – 1 unit (500 g, 1 kg, 2 kg; berry to sugar ratio 1:1)

Water – 1/5 of the berry weight (100 g, 200 g, 400 g)

Preparation:

  1. Wash the berries, remove any damaged ones. Dry lightly with paper towels.
  2. Pour the sugar into a saucepan or saucepan, add water, heat until completely dissolved.
  3. Pour the sugar syrup over the berries, bring to a boil, remove the foam, let sit for at least 6 hours (usually overnight).
  4. Cook the jam for about 20 more minutes.
  5. Pour the hot jam into clean sterilized jars (I steam them in advance and dry them upside down).
  6. Store the jam in a cool, dark place.
