This is another great vegetable recipe. Eggplants are a great ingredient for healthy and filling dishes.
Ingredients:
Eggplants – 3-4 pcs.
Garlic – 2-3 cloves
Salt – 1 teaspoon
Sugar – 1 teaspoon
Olive oil – 1.5 tablespoons
Lemon juice – 1 tablespoon
Grain mustard – 1 teaspoon
Pepper mix – to taste
Coriander – to taste
Thyme, basil (dried) – to taste
Fresh herbs: basil, dill, parsley
Preparation:
- Peel the eggplants, cut into rings, lightly salt, sprinkle with oil, mix. Leave for 2-3 minutes.
- Place the eggplants on a baking sheet covered with baking paper. Bake in the oven for 50-60 minutes at 180 degrees.
- Prepare the marinade. Mix lemon juice, olive oil, chopped garlic, salt, sugar, pepper mixture, herbs (thyme, basil).
- Put the eggplants in a deep bowl.
- Finely chop the fresh herbs, add to the eggplants.
- Pour the marinade over the eggplants, mix.
- Refrigerate for 30-40 minutes.
